I try to cook. I really do. Sometimes I even succeed. And other times? Well, we always keep some cans of soup on hand for dinner disasters.
I’m better at baking though. My gingerbread cookies are fabulous, and I make a mean pumpkin bread. I’ve baked souffles and pies and cheesecakes. Still, I’m always on the lookout for recipes with “easy” or “simple” in the title.
So when Mighty Nut asked me to try out their powdered peanut butter and to use it in a recipe, I hopped on the internet and searched for recipes that looked yummy and uncomplicated. And then I came across a recipe for no-bake cookies. “No-Bake” is even better than “easy” or “simple,” right?
Mighty Nut
Mighty Nut powdered peanut butter is part of the Peanut Butter & Co. family. Each batch of Mighty Nut is made with USA grown peanuts. The peanuts are roasted and pressed, which removes most of the fat but leaves the protein, fiber, and yummy peanut butter taste. Mighty Nut powdered peanut butter can be rehydrated, or it can be used for baking, cooking, or in smoothies.
Mighty Nut comes in 4 flavors: Original, Chocolate, Vanilla, and Flax & Chia.

No-Bake Chocolate Peanut Butter Cookies
Original recipe submitted by a user to caloriecount.com.
Ingredients:
- 1/8 cup sugar or sugar substitute
- 1/4 cup low-fat milk
- 1/4 cut unsweetened applesauce
- 2 tablespoons unsweetened cocoa powder
- 4 tablespoons Mighty Nut powdered peanut butter, any flavor
- 1 1/2 cups quick-cooking oats
- 1 teaspoon vanilla extract
Directions:
- In a medium saucepan, combine sugar, milk, applesauce, and cocoa.
- Bring to a boil and cook for 1 1/2 minutes.
- Remove from heat and stir in Mighty Nut peanut butter, oats, and vanilla.
- Drop by teaspoonfuls onto wax paper. Let cool until hardened.

oh my, the chocolate flavor hands down! i’m the biggest sucker for chocolate nut butters. i usually buy the Peanut Butter Co.’s dark chocolate dreams peanut butter but my favorite is Justin’s chocolate hazelnut butter (it’s just way too expensive to keep stocked all the time in my pantry because i eat it all so fast) :p
