I was born a picky eater.
Ask my parents. They’ll be more than happy to regale you with stories of bribing me to eat and chasing me around the house with forkfuls of food.
Ask my best friend. She’ll tell you all about our senior year of college, when Cheez-Its accounted for about 75% of my diet.
Ask my husband. He’ll tell you that unless he makes and hand-delivers me a protein shake, I’ll run 20 miles, eat a handful of graham crackers, and call it a day.
To put it bluntly, my eating habits stink, and as a marathon runner, this has been one of my biggest obstacles. In particular, I have to work hard to eat enough protein. Our bodies need protein for muscle growth and repair – so it’s especially important for endurance runners to eat good protein after a long run so that damaged tissue can begin to repair.
So what proteins are “good proteins?”
According to the folks at Harvard School of Public Health, your best bet is to stick with fish, poultry, and beans. One of my favorite sources of lean protein is Starkist tuna fish. It’s yummy, easy, and versatile – with just a few quick steps, I can prepare a healthy post-run meal.
One of my newest discoveries is Flatout Flatbread. Have you tried this stuff yet? It’s so good! It comes in a ton of varieties, sizes, and flavors, and you can use it to make sandwiches, wraps, quesadillas, and even desserts. It’s also the perfect complement to tuna. I found this recipe on Flatout’s website, and today I used it to make the perfect tuna melt:
Classic Flatout Foldit StarKist® Tuna Melt
1 Flatout Foldit® Flatbread
1 Pouch (2.6 oz.) StarKist® Chunk Light Tuna in Water
1/4 cup diced celery
1 Tbsp. sweet pickle relish
1 Tbsp. light mayonnaise
1/2 tsp. lemon juice
1/8 cup shredded sharp cheddar cheese
- In a medium bowl, combine tuna, celery, relish, mayonnaise, and lemon juice and mix well. (I used dill relish instead of sweet pickle relish because I prefer it, and because it’s what we had in the house.)
- Spray a small frying pan with non-stick cooking spray. Heat over medium low heat. Place Foldit in pan.
- Place 1/2 tuna mixture on one half of Foldit, top with cheddar cheese and fold other half over. Cook for 1 – 2 minutes until the flatbread begins to brown; flip and cook on second side until browned and cheese begins to bubble (approximately 1 – 2 minutes).
- Remove from pan, cut in half and serve.
